How are Cloudflare's nameservers different from the DNS provided by Google DNS or OpenDNS? Can I delegate to
Cloudflare nameservers while still using my host's DNS?

Could you please let me know if you are referring to the nameservers assigned to a domain when you add it to Cloudflare or, rather, to Cloudflare's DNS server https://one.one.one.one?
If it is the former, then these are only used as authoritative nameservers for the domain you added to Cloudflare.
If your question is about the latter, then Cloudflare's service is similar to the other services you mentioned, but comes with additional security and performance features.

I guess it was done deliberately, but here it was not clear if the customer meant the authoritative for each domain or the public DNS resolver. For that reason the question for clarification.
